Kelsey's Scone Recipe

I've been asked to give out this recipe so often that I've decided to post it here.

Kelsey's Scone Recipe

2 c. flour
1/4 c. sugar
3 t. baking powder
2 t. grated orange (or lemon) peel
1/2 t. salt
1/2 c. dried cranberries (or blueberries, raisins, etc)
1/2 c. white chocolate chips
1 1/3 c. whipping cream

glaze:
1 c. powdered sugar
2-3 T. orange juice (or lemon)

Heat oven to 400.

Lightly grease cookie sheet. In large bowl, combine all of the ingredients, stirring well. Lastly, add the whipping cream, all at once. GENTLY combine. Over-mixing will make the scones dense and tough.

On a lightly floured surface, knead dough 5-6 times. Divide dough in half. Pat each half into 6" round. Cut each round into 4 wedges. Place on cookie sheet.

Bake for 10-13 minutes, until slightly golden on top. Remove to rack and let cool.

Mix powdered sugar and juice for glaze. Spoon on top and let dry.

PS - I've made mini-scones with less mess by kneading the dough gently in the mixing bowl, and using a cookie scoop to form the scones. This makes a ton of little, cookie-sized scones.
